Like all fish, Tilefish get their flavor from what they eat. The deep-water fish eats mainly crustaceans such as shrimp and lobster. The meat is pinkish white when raw, but will be white and flaky after cooking. Known as the, “Clown of the sea,” Tilefish can be found from Florida to Nova Scotia. *Best pan sautéed, baked, boiled, or pan-fried.
